Yes, if you use gluten free graham crackers to make the crust for these mini cheesecakes, then your dessert is gluten free.
Of course, you’ll need to double check that all of the ingredients are certified gluten free — keep an eye on your vanilla– but these cheesecake ingredients should be gluten free.

What are the ingredients in cheesecake with a graham cracker crust?
- gluten free honey graham crackers (or traditional graham crackers if you wish)
- butter, melted
- brown sugar
- cream cheese
- sweetened condensed milk
- pure vanilla extract
How do I make a no bake cheesecake recipe?
- Make the graham cracker crust.
- Fill your mini muffin baking cups with the crust. Freeze for 15 minutes.
- Make the cream cheese filling. Top the chilled crusts with the cream cheese filling.
- Add toppings like mini chocolate chips if you wish. Freeze until set.
Let’s dive in to each step:
The first step is to weigh the graham crackers. Six ounces is about right. Melt four tablespoons (2 ounces) of butter. Adding just a touch of brown sugar helps the texture and sweetness of the crust.
Pulse the graham crackers, melted butter, and brown sugar in a food processor.
Fill your mini muffin pan with mini paper baking cups. Scoop about one teaspoon out at a time and fill each baking cup.
Press down to compact the crust. Did you know that you can buy graham cracker crumbs? I was surprised when I saw them in the baking section. I still think it is so easy to make your own. Making your own gives you the flexibility to make a gluten free crust.
The cheesecake crust will hold up better if you really press down firmly on this graham cracker mixture. Put the pan in the freezer for 10-15 minutes. Meanwhile make the no bake cheesecake filling.
With a hand held mixer, beat the cream cheese, sweetened condensed milk, and vanilla on high for 2-3 minutes in a large bowl. Be sure to get all of the lumps out. If your cream cheese is lumpy, it might just be cold. Blend until the filling is smooth.
Fill each chilled crust with the cheesecake filling. I find that the Ziploc icing bag trick is perfect for this application. It’s as easy as it sounds– make a pastry bag out of a Ziploc bag for a quick and easy way to fill each mini cheesecake.
What toppings can go on a cheesecake?
Want to make plain cheesecakes? Keep these no bake cheesecake bites just as they are– plain and simple.
Do you want to add just a bit more to the top? Do it now, before the cheesecake filling is refrigerated. You can add any number of toppings:
- mini chocolate chips
- heath bar toffee bits
- Andes mint creme de menthe baking bits
- berries like strawberries or blueberries
- butterscotch chips
- chopped candy bits
Keep in mind that if you are making these gluten free, then your toppings also have to be gluten free.
Can you make mini cheesecake with vanilla wafers?
Sure! You can switch out the graham cracker crust to use Nilla Wafers (not gluten free), Oreos (not gluten free), or a gluten free wafer cookie or cinnamon cookie.

Ingredients
- 6 ounces graham crackers (gluten free or traditional)
- 2 ounces (4 tablespoons) butter, melted
- 2 tablespoons brown sugar
- 8 ounces cream cheese
- 1/2 cup sweetened condensed milk
- 1 teaspoon pure vanilla extract
Instructions
Pulse the graham crackers, melted butter, and brown sugar in a food processor.
Fill mini muffin pans with mini baking cups. Press one teaspoon of graham cracker mixture into each mini baking cup. Press firmly. Put the mini muffin tray in the freezer for 15 minutes.
Make the cheesecake filling: Use a hand held mixer to beat the cream cheese, sweetened condensed milk and vanilla until smooth. Top each chilled crust with the cheesecake filling.
Add any toppings you wish (or leave plain) then place in the freezer for an hour to set.
Remove and let sit at room temperature for 10 minutes before serving.

My son requested mini cheesecakes for his graduation party! Do you think I could make these a few weeks in advance and keep them in the freezer? Do you think they would get too soft and melt if I keep them out at the graduation?

Yes, these freeze really well. Just freeze without a topping (so only the crust and the cheesecake) and then on the day of the party if you want to add toppings like ganache, lemon curd, fresh fruit or something else, add before serving. Do you live somewhere warm? Hard to say how fast they will melt without knowing more about your location. Why don't you freeze them then test it out a few days before the party with 2-3 cheesecakes. See how long it takes to let them defrost to just the right temp. Congrats to your son on his graduation!
